Chocolate & Oat Banana Bread

This Chocolate & Oat Banana Bread is one of our family’s favourite treats, it’s lucky if a loaf lasts a few days around here. It’s made on spelt flour and oats which gives it a wholegrain boost with extra fibre and sustained energy. Plus, it’s a great excuse to bake if you’ve got any bananas that are getting a little funky or some yoghurt that’s about to go out of date. It’s a perfect addition to the lunchbox and makes a great afternoon tea, just be sure to leave out the nuts if you have a no-nuts policy at your school or if you have small children as they can present a choking hazard.

Ingredients
  1. 1 1/2 cups of spelt flour
  2. 1/3 cup unsweetened cocoa powder
  3. 2 teaspoons of baking powder
  4. 1/2 teaspoon bi-carb soda
  5. 1/2 cup rolled oats, plus extra for decorating
  6. 1/3 cup pure maple syrup
  7. 1/3 cup milk of your choice
  8. 1 teaspoon of lemon juice (or apple cider vinegar works well also)
  9. 1/3 cup olive or macadamia oil
  10. 2 eggs
  11. 1 teaspoon of vanilla extract
  12. 1 cup mashed ripe banana, approximately 2 bananas
  13. 1/2 cup natural yoghurt
  14. 1/2 cup chopped walnuts (optional)
Instructions
  1. Preheat oven to 180C/160C fan-forced. Line the base of a loaf pan with baking paper.
  2. Sift flour, cocoa, baking powder and bi-carb soda into a large bowl. Add oats and stir to combine. Make a well in the centre.
  3. Whisk maple syrup, milk, lemon juice (or ACV), oil, eggs and vanilla in a jug. Add to flour mixture along with mashed banana, yoghurt and nuts (if using). Stir until combined.
  4. Pour mixture into loaf pan and sprinkle with some oats. Bake for 1 hour or until a skewer inserted comes out clean. Allow to cool in pan.
